Lean as opposed to fat. Lean meat is meat without much fat.
In the west, lean meat is nowadays favoured over fatty meat, presumably for health reasons, however when it comes to tuna for sushi or sashimi some fattier parts of the fish are highly prized because of their superior taste and texture.
